Funky-fied

That's me.  I have been in a bit of a funk these last couple of weeks.  All I have wanted to do is plop down on my sofa in my sweatpants, cover up with a down-filled blanket, and fall asleep while watching some foodie show.  Michael and I have eaten many dinners consisting of sandwiches and potato chips. 

This weekend, I tried to step up a little bit.  Saturday night, I marinated a flank steak and made a homemade salsa (recipes below) and we ate tacos for supper as we had a nice quiet night at home watching SEC football.  I'll admit, the apt smelled really good as the steak was sizzling away on the stove top.

Marinated Flank Steak

  • zest and juice of two limes
  • 2 tablespoons of honey (for sweetness)
  • 2 tablespoons of extra virgin olive oil
  • 2 tablespoons of freshly squeezed orange juice
  • 3 garlic cloves, finely minced
  • 1 tablespoon dried oregano
  • 1 tablespoon chili powder

marinate flank steak for a minimum of 3 hours.

 

Homemade Salsa (this recipe made a quart of salsa - of which MB polished off in 2 sittings)

  • 3 tomatoes, cut into chunky bits
  • 5 or 6 garlic cloves
  • 2 big handfuls of cilantro
  • 3 jalapeno peppers, seeds removed and cut into chunky bits
  • 1 half of a yellow onion, cut into chunky bits
  • 2 tablespoons of freshly squeezed orange juice
  • zest of 1 lime
  • juice of 1 half of lime
  • 1 tablespoon of extra virgin olive oil
  • 1 small handful of flat leaf italian parsley
  • 1 slice of fresh pineapple, cut into chunky bits
  • 1 good pinch of dried red pepper flakes
  • 1 pinch of kosher salt

Place all of the above items in a food processor and pulse several times until all items are incorporated but still chunky.   The longer this sits, the flavors start to meld together and it tastes really good!!
